The kind that get people out of bed without arguing
There are two kinds of mornings: the rushed kind where everyone’s late, and the kind where pancakes happen. This recipe belongs to the second category.
These are the pancakes I make when the house is just waking up. When the coffee is strong, the light is soft, and nobody is asking what’s for breakfast because they already know. They’re fluffy, forgiving, and don’t require a degree in breakfast engineering.
No box. No fuss. Just a bowl, a whisk, and the quiet confidence that pancakes make mornings better.
Ingredients
- 3 cups flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 3 eggs
- 1½ cups milk
- A splash of vanilla
- A pinch of cinnamon, optional but encouraged if you’re feeling fancy
How to Make Them
- In a large bowl, whisk together the flour, baking powder, and salt.
- Add the eggs, milk, vanilla, and cinnamon if using. Stir until just combined. Lumps are allowed. Overmixing is not.
- Heat a skillet or griddle over medium heat and lightly grease it.
- Pour batter onto the hot surface and cook until bubbles form and the edges look set. Flip and cook until golden.
- Repeat until the batter is gone and the kitchen smells like a good decision.

- Syrup, obviously
- Fruit if you’re trying
- Straight off the griddle if you’re not
Leftovers reheat well, but let’s be honest… there usually aren’t any.

Some mornings don’t need to be productive. They just need pancakes.
Don’t overthink these. If the batter‘s a little lumpy, you’re doing it right. If someone sneaks one before your sit down, that’s love. And if there are leftovers, they make excellent midnight snacks.
